What Our Pastry Section Actually Does

Pastry is the quietest station in our kitchen and the one that starts earliest. A look inside the section that produces everything from the morning's croissants to the smoked chocolate at the pass.

A section that starts at 4am

The pastry section works a different clock. Lamination for the day's croissants and danishes begins at four, because laminated dough demands cold hands and colder benches and neither survives a working kitchen. By the time the grill lights for lunch, pastry has already produced the morning's viennoiserie, the bread service butter and the day's choux.

The section runs as a kitchen inside the kitchen, with its own prep, its own equipment and its own logic. Where the grill works in fire and instinct, pastry works in grams and rest times, and the two disciplines meet at the dessert menu.

The desserts worth saving room for

The signature is the smoked chocolate served at the pass: a dark chocolate shell filled with salted caramel and a smoked crème, torched at the counter so the smoke lifts when the shell opens. It exists because the grill team wanted a dessert that smelled like the kitchen does at midnight.

The seasonal desserts rotate with the menu, but the format stays: one warm, one cold, one built on whatever fruit is peaking. Right now that means a burnt fig leaf tart and a wattleseed custard. The full current list is on the menu page.

How to eat dessert properly here

Order dessert when you order the mains, not after. The warm desserts take twelve minutes and the kitchen times them to land when your table is ready.

Share the smoked chocolate. It is built for two spoons and the reveal plays better when the whole table watches the shell open.

And ask about the morning viennoiserie to take away. What survives service sells at the counter until it is gone.
